Equinox and the alcoholic, pt 2

This is the good part!

We celebrated autumn equinox today with a seasonal Sunday dinner of Angel’s Honey & Ginger Glazed Pork Chops with Angel’s Rustic Applesauce and some stove top stuffing. We also did yardwork, made a wreath for our front door, and spiffied the place up in general. It was lovely, really. One of the best weekends I’ve had in a long time. Here’s some pics.

Angel’s Fried Apples

Ingredients
5 Gala Apples, chopped (those are my fave kind but you can use any variety you wish, just adjust the sugars to taste)
2 TBSP butter
3 TBSP brown sugar
4 tsp cinnamon (or to taste)
a dash of nutmeg
a dash of pure vanilla extract
1 cup apple juice
1 inch piece of fresh ginger root
*optional 1/4 c white granulated sugar*

Put everything into a pot, cover, and cook over medium heat. As the mixture comes to a bubble, remove the cover and the liquid will begin to reduce. Cook until all apples are tender. Remove ginger before serving. Good over ice cream too 🙂
